Mexican chorizo is a popular sausage in Mexico and the Americas, commonly used in dishes like tacos, burritos, and tortas. A breakfast favorite, it's often mixed into scrambled eggs for a flavorful "chorizo con huevos," a classic choice for breakfast burritos or tacos. The cooked chorizo has a finely minced texture, making it versatile for pairing with ingredients like refried beans, potatoes, and cheese. Traditional chorizo is deep red from chili seasoning, but "green chorizo" from the Toluca Valley stands out with its vibrant color, made using tomatillo, cilantro, and garlic. Chorizo is typically available in fresh or dried varieties, with the fresh version being more common. It is usually sold without casings or in casings that are easily removed. When cooked, it's fried and mashed with a fork to create finely minced meat, ideal for mixing into dishes or as a topping. Chorizo is not only used in tacos, burritos, and pizzas but also in appetizers like choriqueso (chorizo and melted cheese with tortillas or chips) and dishes like "chorizo con papas," where diced potatoes are sautéed with the sausage.
