Chicken Souvlaki is the perfect on-the-go Greek meal, and it's been delighting taste buds since ancient times! Souvlaki refers to skewered, grilled meat, and the name itself comes from the Greek word *souvla*, meaning “skewer.” The tradition of grilling meat on skewers goes back thousands of years—there’s evidence that ancient Greeks were grilling meats as far back as the time of Homer, where it was referred to as *obeliskos*. Chicken souvlaki is a more recent twist on this ancient dish, marinated with olive oil, lemon, garlic, and oregano before being grilled to juicy perfection. Traditionally, souvlaki was made with pork, but the lighter, healthier chicken version has become incredibly popular in modern Greece and around the world. It’s typically served wrapped in pita bread with tomatoes, onions, tzatziki (yogurt sauce), and maybe a few fries tucked in there for good measure. Fun fact: In ancient Greece, souvlaki-style skewered meat was actually considered a street food! It's amazing to think that this humble dish has survived millennia and is still a favorite street food today in Athens and beyond.
