Ragoût d’igname, or yam stew, is a hearty Burkinabe dish made from yams, often cooked with tomatoes, onions, and sometimes meat or fish. In Burkina Faso, yams are typically grown in the northern regions and are highly valued as a source of sustenance, particularly during the dry season when other crops may be scarce. In some communities, they are associated with wealth and status, and certain rituals, like the yam festival, are held to celebrate the first harvest of the season. Yams are also incredibly nutritious, being rich in complex carbohydrates, fiber, and vitamins, making them a key part of the Burkinabe diet.
