Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion chopped
- ½ pound ground pork
- 2 garlic cloves minced
- 2- inch piece ginger minced
- 1 head cabbage shredded (should yield 3 to 4 cups)
- 2 tablespoons soy sauce
- 1 teaspoon fish sauce
- 1 teaspoon toasted sesame oil
- 1 14- ounce jar spicy kimchi juice and all
- 4 cups Chicken Bone Broth
- 2 scallions thinly sliced
Instructions
- In a large pot over medium heat, warm the coconut oil until melted.
- Add the onion and cook until translucent, 4 to 6 minutes.
- Add the ground pork and cook, breaking it up with a spoon, until browned, 8 to 10 minutes.
- Add the garlic and ginger and cook for another minute.
- Add the cabbage. Then stir in the soy sauce, fish sauce, sesame oil and kimchi and kimchi juice.
- Add the bone broth and bring to a boil. Reduce the heat to a simmer and cook, covered, until the cabbage is completely soft, 15 to 20 minutes.
- Remove from the heat and garnish with the scallions.
